What"s for dinner? When you say "Ham Balls" in Florida, no one knows what you are talking about unless they are from the midwest. Ham Balls have been on our Christmas dinner menu for years. This year, not. I always try to purchase Ham Ball mix from Fareway and bring it back from Iowa. Frozen and wrapped up in dirty clothes, its all good. Called the local butchers and only one knew what I was talking about but did not have any. Result..... Christmas dinner was a spiral ham.
Lots of ham leftover. We have had potato and ham soup. Omelets with ham. Ham and beans. And even made my own ham ball mix. Cubed it.
Very lean and very "hammy" but my boys enjoyed it. Two meals out of this mixture and a pan frozen in the freezer. Just not the same. Next year, Fareway is back on my places to visit while in Iowa. Here's the recipe if you want it. Mix together the following:
2 to 3 cups of crushed graham crackers
1 Tablespoon mustard
2 1/2 pounds of prepared ham loaf ( Mine was 1 pd ham; 1 pd pork sausage and 1/2 pd. hamburger)
2 eggs
milk ( sorry not sure of the amount, just enough to make moist enough to roll into balls)
Shape into 1 1/2 inch balls. Place in baking dish. Prepare sauce. Ingredients: 1 can tomato soup, 3/4 cup vinegar, 1 cup brown sugar, 1 cup brown sugar. Mix together in saucepan and bring to a boil for 3 minutes. Pour over balls. Bake uncovered for 1 hour at 350 degrees.
